On the far western side of Tjörn, on the herring island of Klädesholmen, is where you’ll find Salt & Sill – the inn with the best location on the west coast. A glorious seating area on the pier and a window with a sea view give an unbeatable closeness to the sea. This island restaurant has, since its launch in 1999, become famous for its Herring Platter and for serving food with a strong focus on quality, locally produced raw materials, local traditions, and the sea. The restaurant has been awarded the status ‘Worth a Journey’ and ‘White’s Heart’ by White Guide, the Swedish Restaurant Guide, as well as the quality accreditation "Västsvensk Mersmak" by the Tourist Board for the West of Sweden. Salt & Sill serves traditional regional dishes, combined with innovative thinking, and its speciality, herring. The restaurant seats 175, plus another 120 outside on the pier.

Sweden’s first floating hotel
In October 2008, Sweden’s first floating hotel will open alongside the restaurant. The hotel will be a meeting and conference venue with 46 beds, and will be open all year round. At the hotel, guests can work and socialise in an inspiring environment, enjoy good food and drink, and then fall asleep to the sound of lapping waves. Despite the serene setting, there is plenty of opportunity for exciting and fun activities, with focus on the sea or food & drink. The staff members are professional and service-minded and do their outmost to look after – not the customer – but the individual person. Salt & Sill is a hotel and meeting place with a cosy, personal atmosphere, and a style characterised by modern Scandinavian simplicity.
Salt & Sill is owned by Salt & Co Tjörn AB and its owners Susanna and Patrick Hermansson. The company is a wholly owned subsidiary of Elma Holding Tjörn AB. Apart from Salt & Co, the group also includes Almö Livs Tjörn AB and an associated company called Krogförlaget Tjörn AB, a publishing house.

Environment & Ecology
Salt & Sill has always been passionate about the environment. With food, it’s about using local raw materials as far as possible. During the building of the floating hotel, protecting the environment has obviously been at the top of the agenda. The establishment should have a positive impact on outdoor pursuits and recreation, and should have little or no effect on the living environment, safety or communications on the island. Neither should it cause any significant noise pollution, nor pollution of air, land or water. The excavating rock left over from the building work will be used to build a new lobster reef outside the hotel, which will benefit both fish and shellfish. The marine life underneath the floating pontoons is expected to increase, and will include a mussel purification plant. Naturally, the hotel will be heated using the surrounding water.
History
10 years with Salt & Sill
Salt & Sill’s history goes back just over 10 years, with the present owners. Susanna och Patrick Hermansson are, through the company Salt & Co, the third set of owners for this now famous restaurant on Klädesholmen, the Herring Island. Their passion for food and people became the starting point for this internationally acclaimed restaurant, and now also for Sweden’s first floating hotel.
The aim of the restaurant, apart from becoming a well-renowned island inn, was to provide both visitors and residents on Klädesholmen with high quality food based on local raw materials and strongly influenced by the coast and the sea. The restaurant’s speciality became herring – one of Sweden’s oldest food traditions with endless possibilities for variation. And where else should Sweden’s herring restaurant be located, if not on the island of Klädesholmen? This old fishing community dates back to the 15th century, and early on housed both salting-houses and canneries (read more about Klädesholmen here). Salt & Sill’s ambition was, and still is today, to develop their guests’ interest in food and inspire them to enjoy new flavours.
Sweden’s first floating hotel
Salt & Sill’s owners, Susanna and Patrick Hermansson’s, ideas about a hotel were born in 2004. The dream was to start a business offering a complete experience within food, drink and accommodation, built around the peaceful island of Klädesholmen. A hotel with meeting and conference facilities, which opens up brand new possibilities – all year round, became the answer to their dreams. And the limited space on Klädesholmen meant there was only one way to realise it – they had to build a floating hotel.
In March 2005 they moved closer to realising their goal, much thanks to close co-operation with Tjörn’s local council, local businesses, the community association, and the residents of Klädesholmen. Everyone agreed that Sweden’s first floating hotel would make Klädesholmen into a popular destination all year round. The approval from the Environmental Court in March 2008 became the go-ahead to start the building work. To avoid causing disruption to neighbours and the island environment, the building work was carried out at a nearby quay in Wallhamn. Building the hotel on floating pontoons at a different location to where it would be permanently moored was a challenge in itself. The next challenge was the move – across the sea.
In July, the hottest part of the summer, when the Marstrand Fjord was dead calm, the six hotel modules were towed from Wallhamn to Ängholmen. After the next move, to their final destination at Klädesholmen, the doors will open to guests who want to stay, eat and hold conferences at Sweden’s first floating hotel. Klädesholmen
Klädesholmen is an old fishing community dating back to the 15th century, where herring salting-houses and canneries were built early on. Like most of the Swedish island and coastal communities, Klädesholmen had its golden age during the Great Herring Period 1748-1808.
The harbour, which was then in the Holme Fjord, filled with boats from near and far collecting the salted herring and the train oil to transport it to different parts of Europe. The church was built during the Great Herring Period and is today Tjörn’s oldest remaining church. In 1808 the herring disappeared. The community quickly went downhill and the population reduced to just over three hundred in 1830. The recovery began in 1861, when two islanders discovered that there was fish near Storeggen (Ålesund). This caused many of the fishing boats to travel up towards Norway. When the herring returned to the coast in the latter part of the 19th century, the food manufacturing industry started to take shape.
Large warehouses were erected, in which herring was salted and fish prepared. Around the turn of the century, smaller boats were purchased and used to visit most of Sweden’s harbours to sell the locally produced delicacies, such as dried cod, salted herring etc. At around the same time, people here learnt how to make spiced herring and sprat, and started selling different varieties of pickled herring. The art of spicing and pickling was learnt from recipes bought from wholesale dealers.
Today, production is concentrated to one company, Klädesholmen Seafood AB. Some of the company owners are of the fifth generation and almost half of all Swedish pickled herring comes from Klädesholmen, much of it under other brand names.
Why not visit Klädesholmen’s museum – ‘Sillebua', a small museum where you can see how it all happened. At the food store, ICA Bojen, you can buy most of the herring varieties produced by the companies on the island.

At Salt & Sill, Sweden’s first floating hotel, we offer a peaceful environment with guaranteed sea views over Bohuslän’s outer archipelago. Whether you’re a private or business customer, you can enjoy modern accommodation in a relaxing setting, right next to our well-known restaurant and only 45 minutes by car from Gothenburg.
The hotel consists of six two-storey buildings on floating pontoons. The hotel has 23 rooms with 46 beds, one of which is a suite. All the rooms have their own entrance and access to an outdoor seating area. The interior is characterised by modern Scandinavian simplicity with functional furniture and unique detailing. There is also a clear connection to food and wine. All the rooms are named after spices used in the kitchen and the colours have been carefully chosen to match.

Suite
The suite is located at the top and far end of the hotel and offers a fantastic view over the fjord and the island Flatholmen. To enjoy the sunset and the sounds of the sea from a Jacuzzi on the roof terrace is guaranteed to add an extra dimension to an already romantic setting. Like the rest of the rooms, the suite is equipped with internet connection and television.

Menus
Restaurant Salt & Sill has, ever since the start in 1999, been known for its food with its strong focus on quality, local produce, and sea & coast. The menus are carefully composed of everything the sea has to offer, with focus on traditional dishes from the county of Bohuslän and herring, our own speciality.
For parties of more than eight we use suggested menus – to ensure we offer the best possible service even to larger groups. If you’d like to change something, or create your own menu, this is not a problem as long as everyone in the group has the same menu.

Salt & Sill is the perfect place for company get-togethers, conferences, staff development and customer meetings. Peace and quiet by the coast, a venue with breathtaking sea views, good food and a great choice of activities make your stay here into more than just a meeting. Salt & Sill offers six conference rooms of varying size. Three of the rooms are above the restaurant, and can also be opened up to make one larger room. A further two can be found on the top floor of the Boathouse outside the restaurant. Downstairs is a cosy lounge and food studio where we can organise cooking activities and drink tastings. Conference activities
We have a large offering of conference activities including different experiences, relaxation or adventure. Our location offers fantastic opportunities for outdoor water-based activities. We work closely with a number of reputable event organisers to be able to customise activities to suit all types of conferences and groups.
Cooking evenings
Since Salt & Sill is based around good food and drink, we want to offer our guests the opportunity to join in our traditional yet inventive cooking. During a cookery evening with us, you take part in everything from setting the table and preparing a four-course dinner to enjoying a tasty snack in the kitchen. Our chefs inspire and teach in a light-hearted way. The menu is decided based on the season and we tailor the course to your wishes.
Drink tastings
We have a large offering of different drink tastings, on their own or in combination with food. Choose between wine, beer, champagne and spirit tastings. We see ourselves as experts on herring and schnapps, so why not try a herring and schnapps tasting? You’re guaranteed an unusual experience and will learn more about this Scandinavian drink, which has made the journey from the poor man’s table to the posh restaurants and has become an increasingly regular feature on the Swedish food table.
RIB orienteering
Most of us probably tried finding our way through a forest on foot using map and compass while we were at school, but how many have tried navigating from a boat doing 60 knots? You can try this at Salt & Sill together with our event company. RIB Orienteering is a team competition. Each team is given an RIB-boat, a skipper, a nautical chart and a compass. The aim of the competition is to guide your skipper to the stations marked on the nautical chart, where tricky tasks await.
